Cornish Blue, cranberry & caramelised onion tart recipe
INGREDIENTS:
1 Sheet of puffy pastry 1 Egg to brush pastry with
200g of Cornish Blue
Handful of cranberries
Handful of toasted pine nuts
Rocket
2 white onions ( thinly sliced )
30g of butter
1 Tablespoon of butter
METHOD:
1. Start by preheating your oven to 200 degrees then roll out your puffy pastry and poke it all over with a fork, once that is done on a medium heat add your butter, onions & sugar cook this until the onions become soft and brown. Put in a bowl and set to the side.
2. Crack your egg and with a brush, brush the pastry all over then place the pastry in the oven for 5 minutes to cook a little. Once 5 minutes is up take it out add onions, cranberries & cheese put back in the oven and allow to cook for another 10 minutes ( or until desired crispyness )
3. While the pastry is in the oven toast some pine nuts on a low heat. Once pastry is cooked remove from the oven top with pine nuts, rocket, salt & pepper. Cut into desired amount of portions and enjoy!Recipe by @gardenofedes_ on instagram.
