Cornish Blue and prosciutto bruschetta recipe

Serves 2


4 slices Sourdough 

 Olive oil

 1 tbsp Lemon juice 

 10g Toasted pine nuts 

 20g Rocket, cress or pea shoots

 4 Slices prosciutto 

 70g Cornish Blue Cheese

 Balsamic glaze or honey

 Salt & pepper 


  1. Begin by heating some olive oil in a pan over a low heat. Place the sourdough in the pan and toast it lightly on one side. Once the bread is crispy and brown, remove it from the heat and set side.
  2. In a bowl, add your chosen greens and season with the lemon juice, salt, pepper and a drizzle of olive oil. Place the sourdough on a tray and layer with Cornish Blue, prosciutto, the greens, toasted pine nuts and a drizzle of balsamic glaze.
  3. Serve as a starter dish with a glass of your favourite wine.
