Cornish Blue and prosciutto bruschetta recipe
4 slices Sourdough
1 tbsp Lemon juice
10g Toasted pine nuts
20g Rocket, cress or pea shoots
4 Slices prosciutto
Balsamic glaze or honey
Salt & pepper
- Begin by heating some olive oil in a pan over a low heat. Place the sourdough in the pan and toast it lightly on one side. Once the bread is crispy and brown, remove it from the heat and set side.
- In a bowl, add your chosen greens and season with the lemon juice, salt, pepper and a drizzle of olive oil. Place the sourdough on a tray and layer with Cornish Blue, prosciutto, the greens, toasted pine nuts and a drizzle of balsamic glaze.
- Serve as a starter dish with a glass of your favourite wine.
