Why use extra mature Cornish Cheddar in a scone?

Extra Mature Cornish Cheddar has a richer, more intense flavour than a younger cheddar, so its bold, savoury character still shines through after baking. As it melts into the dough, it adds a delicious depth of flavour while creating a beautifully golden, crisp topping.

The result is a light, fluffy cheese scone with a rich Cornish cheddar taste in every bite.

Ingredients

Makes 8-10 scones.

  • 450g self-raising flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp cracked black pepper
  • 1 tsp English mustard powder
  • 100g cold unsalted butter, diced
  • 200g extra mature Cornish Cheddar, grated (plus an extra 50g for topping)
  • 250ml whole milk
  • 1 medium free-range egg

How to bake Cornish Cheddar cheese scones

Nothing beats a freshly baked cheese scone, still warm from the oven with a generous helping of butter or our delicious Apple Chutney. This easy Cornish Cheddar cheese scone recipe is packed with rich, mature flavour, a light fluffy texture and a beautifully golden crust.

1. Prepare the oven

Preheat your oven to 200°C (180°C fan) or 220°C conventional. Lightly grease or line a baking tray.

2. Mix the dry ingredients

In a large bowl, combine the flour, baking powder, salt, black pepper and mustard powder.

3. Rub in the butter

Add the cold butter and rub it into the flour using your fingertips until the mixture resembles fine breadcrumbs.

4. Add the cheese

Stir through the grated Cornish Cheddar, keeping a handful aside for topping.

5. Bring the dough together

Beat the egg into the milk, then gradually add to the dry ingredients. Mix until a soft dough forms. Be careful not to overwork the mixture as this helps keep the scones light and fluffy.

6. Shape the scones

Turn the dough onto a lightly floured surface and gently pat it out until it's around 3cm thick. Using a 6cm round cutter, cut out your scones without twisting the cutter, as this helps them rise evenly.

Place onto the prepared baking tray.

7. Add the finishing touch

Brush the tops with a little extra milk and sprinkle over the remaining grated Cornish Cheddar.

8. Bake

Bake for 15–18 minutes, until well risen, golden brown and the cheese has melted beautifully on top.

Allow to cool slightly before serving.
